Restaurat FiftyThree (2008)

Restaurant FiftyThree aimed to offer Chef Han’s personal rendition of an honest cuisine inspired by its natural environment and its diversity. Ingredients that were foraged, raised and grown with ecological sound and sustainable practices were used to create a cuisine with natural pure flavours. In a similar vein, the décor of the dining space was kept minimal with the use of the original solid timber flooring, exposed brick walls, Scandinavian oak wood furniture, charcoal sculptures and natural light.  To dampen the echo, acoustic paint was used on the ceiling.  Table settings, cutlery, accessories were all specially selected to match the interior space.
